    I ordered from Montana flour for the first time, spelt berries. They are clean and I think harder than what I've had from a local source in PA and from Bob's mill on Amazon. That works well for grinding them in a hand grinder with stone milling mechanism, they get cut/ground evenly.

    it is amazing - the gluten develops almost instantly, making it very good for "no-knead" recipes.

    I believe spelt has been designed to make bread. It is excellent in texture and taste and has proven to me its very positive nutritional value.
    I have been using it for the past 14 years and I shall continue to do so.
    It should not be mixed with any other flour!

    I have discovered a sensitivity to wheat and as someone who makes all my bread from scratch, that was a bummer! Enter spelt! :) Although it contains gluten (that is NOT my problem) it acts just like wheat and made delicious bread that rose just like my wheat!

    This grain is a good one! It is the only wheat variety I like for making bread or really anything. I sprout it to make sprouted spelt flour for pancakes or bread. I also grind it without sprouting it and use it in my 100% whole wheat spelt sourdough bread. I love that it is an heirloom variety of wheat berry too!
