This is good whole wheat bread flour. It is a little coarsely ground which probably gives it a better GI index. Gluten development was strong and bread had good volume. For organic whole wheat flour, the price was very reasonable. I only wish I was provided with more information about the flour, such as its state of origin (or country of origin if imported) and its protein content (I'm guessing about 13% protiein). It was a little bitter but that is very common in whole wheat. Overall, it is a strong bread flour at an unbeatable price.

This is some fine flour...as is the other flour I've purchased from Montana Flour. Always seems fresh, price is good (although shipping is pricey) and makes some really fine bread. I imagine I'll be buying flour here for a long time.

We bake buns for our kids 3 time a week with a combination of organic whole wheat flour and organic white flour and they come out great every time. Montana Flour is the best place to order quality organic flour - period.
